This banana bread gives that nostalgia feeling without all the sugar. It's creamy, decadent and won't spike your blood sugar. Clients may or may not have reported (in)patiently waiting for their bananas to ripen so they have a reason to bake it!!

Creamy Chocolate Grain-Free Banana Bread

Ingredients
  • 3 bananas (ripe and mashed)
  • 1/2 medium avocado (mashed)
  • 1/2 cup almond butter
  • 4 eggs
  • 1/4 cup coconut oil (melted)
  • 2 tbsp grass-fed ghee (melted)
  • 2 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 serving unflavored protein powder
  • 1/2 cup dark chocolate chips
Instructions
  1. Preheat oven to 350 F.
  2. In a large bowl, whisk mashed banana, avocado, almond butter, eggs, melted coconut oil, melted ghee and vanilla extract.
  3. In a separate bowl, stir together coconut flour, cinnamon, baking soda, salt and protein powder.
  4. Slowly pour dry ingredients into wet ingredients. Stir in chocolate chips and mix until well combined..
  5. Pour into a greased loaf pan.
  6. Bake for 45-50 minutes or until a toothpick inserted in the middle of the loaf comes out clean.
